Einkorn whole wheat flour has remained more pure and less genetically modified than other varieties. While modern wheat is bred for higher yields and stronger gluten, einkorn’s tiny grain stays true to nature, with fewer carbs, more protein and a sweet flavor.
Here is a simple and healthy recipe that I created. My family enjoys it, and I know yours will too!
1 Bowl Apple cinnamon mini muffins 👉
1 cup of @jovialfoods organic einkorn whole wheat
1 cup of Almond flour
1/4 cup ground flax
1/2 tablespoon of aluminum free baking powder
1 teaspoon salt
1/2 tablespoon or ground cinnamon
1 cup of unsweetened almond or milk or choice
1/4 cup of pure maple syrup
1/2 cup unsweetened organic applesauce
1 tsp of vanilla
Mini muffin tins
Pure olive oil spray for greasing pan
Preheat oven to 375
Mix dry ingredients first
Add and mix in wet ingredients
Grease mini muffin tin
Fill with batter almost but not completely to the top. I like to use a cookie scooper if you have one. Bake for 12 minutes or until a toothpick comes out clean.
Cool for at least 5 minutes before serving, this is a must. They will be super soft.
You can use regular muffin tins, but cook time will be closer to 20 minutes.
These are not super sweet but definitely moist and delicious. Feel free to top with mini chocolate chips we like this brand or fresh blueberries before baking to add another touch of sweetness. I am sure you can use regular whole wheat to make these too, but I cannot confirm it will taste as good. Insert winky face.

Einkorn is a healthy grain with a high content of protein, phosphorous, vitamin B6 and potassium when compared to modern forms of wheat. It also has plenty of carotenoids – the natural red, yellow or orange pigments that are found in many vegetables and fruits, and in a few grains. Carotenoids have the medical properties that help in preventing serious diseases such as cancer.
Almond flour is rich in vitamin E and other antioxidants, which help reduce the risk of serious health conditions like cancer, diabetes, stroke, and heart disease. It’s also an excellent source of magnesium, calcium, and iron.
Flaxseed’s health benefits come from the fact that it’s high in fiber and omega-3 fatty acids, as well as phytochemicals called lignans. One tablespoon of ground flaxseed contains 2 grams of polyunsaturated fatty acids (which includes the omega 3s), and 2 grams of dietary fiber!
