We have been enjoying @kodiakcakes blueberry lemon muffin mix but you know I can’t leave any thing be. So here is the easy way I took this already healthier boxed muffin brand and elevated them even a bit more!
Ingredients:
1 Box of Kodiak blueberry lemon muffins
2 eggs
1 cup of milk of choice (I prefer Ripple Kids plant based milk)
1/3 cup of organic unsweetened applesauce
1/4 cup ground flax
1 cup frozen wild blueberries, plus additional for topping
Directions:
Pre-heat oven to 375 degrees.
Whisk two eggs in a large bowl.
Add contents of muffin mix, milk, ground flax, blueberries to bowl and stir.
Use muffin liners or grease muffin tin.
Should make 12 muffins.
Add a few extra blueberries to top of each muffin, if you want.
Bake for 20 minutes.
Cool for 5 minutes and enjoy.
You may want to go ahead and make two boxes at a time, I always do and they go fast.
Adding these additional ingredients drastically increases the fiber. The Standard American diet is radically low on fiber. More fiber in a diet helps with immunity, overall gut health, regular bowl movements and maintaining a healthy weight.
I like using frozen wild blueberries because they are smaller which is better for baking and typically packed with more antioxidants and nutrients. Look for them in your freezer section but any will do, if the berries are larger you may want to decrease the amount to 3/4 of a cup.
These muffins are not just for breakfast. Works well in a lunchbox or after school snack. And not just for kids but the whole family.
I have not tried using another muffin mix but if you do report back. The lemon does add a unique flavor which may be challenging to some picky eaters. We buy Kodiak brands at Target.
