I have been making a version of this veggie fried rice for years, but friends, I’m here to tell you, it has been perfected! This is a great freezer/pantry staple to keep on hand for whenever you need a quick and healthy meal. I enjoy making it after we come home from a trip, and I’m craving all the veggies. My kids love it too. 💯
Ingredients 👉
2 heaping cups of frozen brown rice
2 heaping cups of frozen riced cauliflower
1 cup of peas or peas & carrot medley
1 cup of frozen corn
1 cup of frozen shelled edamame
2-4 tbsp of olive oil
1/3 cup of @bragg liquid aminos (or soy sauce)
1 tsp of minced garlic and ginger
Juice from 1 lime
Salt & pepper to taste
Large wok pan, something like this. You can use a regular pan, but I love my wok!

Directions 👉
Add 2 tbsp oil to wok over med heat.
Add frozen brown and cauliflower rice.
Toss together and allow to cook for 5 minutes.
Add additional 1-2 tbsp oil and remaining ingredients.
(I’m a big fan of the frozen pre-minced garlic & ginger from Trader Joe’s, check your grocery stores for similar short cuts)
Toss ingredients together, cover and allow to simmer for 10 minutes or so.
Uncover and stir and cook for additional 5 minutes or until all frozen veggies are warmed through.

Great quick weeknight meal or lunch prep for your busy week. Serve with store bought egg rolls.
