I encourage veggies at every meal, the lunchbox is no exception. Lunch is often a favorite meal so this is a great time time to include an extra dose of nutrients. Nobody wants baby going hungry, that’s why this is a delicate balance of good and good for you. But most often, I care more about what they are eating and less about how much they eat. Most Americans are overfed and undernourished. Give yourself and your children the ability to fuel up on the good stuff, no need to wait until dinner time. Lets think outside of the box!
lunch ideas
- Hummus (look for brands with simple ingredients: TJ, Roots, Hope) with sliced bell peppers sticks, cucumbers, snap peas, crackers and frozen pineapple.
- Sunflower butter spread on a tortilla wrap or sandwich with hemp heart or ground flax seed sprinkles, frozen peas, and homemade muffin.
- MiMi’s bars, steamed broccoli, and seasonal fruit.
- Easy Peasy Tahini Pasta, frozen mango chunks served with toothpicks.
