I’ve been on a massive mom-hunt for a healthier but also fluffy traditional pancake recipe.
The search is now over, and this👇 recipe is in.
Approved by all the pancake experts in my messy kitchen.
Ingredients:
Dry:
1 cup of unbleached organic all purpose flour and because ingredients matter here are my two preferred brands @jovialfoods organic Einkorn or King Arthur all purpose (whole wheat of these brands also works great!)
1 cup almond flour or almond meal (I’ve tired both successfully)
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1/4 cup of Coconut sugar or brown sugar
Wet:
1 egg
1 and 1/2 cups of milk (try Ripple brand for a boost of plant protein and calcium)
1 tablespoon of apple cider vinegar (with the mother)
3 tbs of olive oil
Optional* 1/4 cup of mini chocolate chip cookies
Directions:
Mix the wet ingredients first. In a small bowl or measuring cup, beat egg, then add milk, apple cider vinegar and olive oil. Allow to set. Preheat pancake griddle to 350. Mix together the dry ingredients in large bowl. Add wet ingredients to the dry ingredients and slowly stir to combine. Add chocolate chips to badder if using.
Grease griddle with pure olive oil spray or grass fed butter. Use 1/4 measuring cup to make small-medium sized flip easy pancakes. Cook on first side for 2 minutes or until you can scoop a spatula under without it breaking, flip and cook 1 minute. I set a timer.
Serve with @justdatesyrup or Pure Maple Syrup. Makes about 20 pancakes depending on their size. This same recipe also works with your waffle maker. Make a batch or two on the weekend for an easy weekday breakfast, or go crazy and stick them in the lunch box! I hope you love them as much as we do! 😜
About the flour
You will spend more for my suggestions, here’s why I think its worth it:
Einkorn is a healthy grain with a high content of protein, phosphorous, vitamin B6 and potassium when compared to modern forms of wheat. It also has plenty of carotenoids – the natural red, yellow or orange pigments that are found in many vegetables and fruits, and in a few grains. Carotenoids have the medical properties that help in preventing serious diseases such as cancer. You can find this brand online, Amazon, and Whole Foods.
King Arthur’s Hard Red Wheat has a reddish colored husk and produces slightly darker flour than white wheat. Hard Red Wheat is a source of high dietary fiber, which is good for digestion and weight management. It’s rich in betaine, which possesses antioxidant properties and which can aid in overall health. You can find this brand at a wide variety of stores to include Walmart.
Almond flour is rich in vitamin E and other antioxidants, which help reduce the risk of serious health conditions like cancer, diabetes, stroke, and heart disease. It’s also an excellent source of magnesium, calcium, and iron. You can find Almond flour at most grocery stores to include Walmart and Target.
Most all purpose flours are bleached, processed and stripped of all nutrients while adding lots of chemicals and no fiber, when eaten in access this recks havoc on your digestive system, immune function, and over all health.
Purchasing my suggestions will cost you more up front but save you a lot in the end. A bag will last you a long time and you will be returning to this and other recipes using higher quality ingredients time and time again.
Try these Einkorn Whole Wheat mini muffins – I made these using Whole Wheat Einkorn four. All-purpose could also be uses and vice versa for the pancakes. The all purpose will yield a fluffier texture.
