Loaded sweet potato soup for the crock-pot

This creamy, smoky, loaded sweet potato slow cooker soup will keep you coming back for more. Dairy and gluten free, with a few simple steps to - set it and forget. Do not let the coconut milk scare you away. All the flavors blend together perfectly for a fantastic taste that's family approved.

Ingredients
  

  • 2 large or 3 small medium sweet potatoes
  • 1 lb carrots or 5-6 stalks
  • 1 lb celery or 1 large bunch
  • 2 chicken breast
  • 1 tbs salt plus a few pinches
  • 1 tsp garlic powder plus a few pinches
  • 1 tsp smoked paprika plus a few pinches
  • Ground black pepper to taste
  • 4 cup filtered water
  • 1 cup light coconut milk

Instructions
 

  • Gather all of your ingredients.
  • Peel and chop sweet potatoes into chunks. It is important to peel them so they can naturally puree into the soup as it cooks. Add them to the crockpot.
  • Rinse and chop carrots. You do not have to peel them. Add to the crockpot.
  • Rinse, chop and add celery to the pot.
    *Make sure to chop carrots and celery into large similar sized chunks.
  • Nestle the ends of the celery stalks into the veggies.
  • Add salt, garlic and smoked paprika to the top of the veggies.
  • Add 4 cups of filtered water to the crockpot.
  • Sprinkle both sides of chicken breast with a few pinches of the seasonings and lay on top of the veggies.
  • Cook on low fe 6-8 hours. 7 seems to be the sweet spot but it can vary depending on the heat of your slow cooker.
  • After 6-8 hours, remove chicken and celery ends.
  • Add coconut milk to soup and stir well to help break up the soft bites of sweet potato.
  • Chop or shred chicken and add back to soup. Stir again. The sweet potato will puree naturally as you stir the broth and the other veggies remain in tact.
  • Serve

Notes

For *vegan friendly dish skip the chicken and add chickpeas, lentil noodles or rice. 
*** Smoked paprika is what gives this soup the smoky unique flavor. It is one of my favorite spices to use. it's different than traditional paprika and you should absolutely have this in your spice cabinet.  Can be found at most grocery stores.
