med-large food processor or high power blender (5 cup +)
1eggor flax egg
1/2cupall natural (no sugar) peanutor almond butter
1/4cuppure maple syrup
blueberriesor other topping of choice
Heat oven to 375 degrees.
Grease muffin tins or use silicone liners.
Add all of the ingredients to food processor or high power blender.
Blend until well incorporated.
Use ¼ measuring cup to fill muffin tin.
*Optional* Top with blue berries (frozen or fresh) before baking
Bake 25 minutes or until toothpick comes out clean.
Move to cooling rack for 5 minutes.
Remove from tins and allow to cool to room temperature before storing.
Enjoy warm, cold or slather with your favorite nut butter. Store in airtight container for 3 days or in the fridge for up to a week. Freezes well and great to share with friends. Muffins do not rise as high as typical flour muffins.
