My kids were playing house. My daughter kept saying, “I’m a nice mommy, I’m not a grumpy mommy.” And suddenly, I’m insecure about what she is insinuating.
Great for breakfast or really anytime! The batter for this sheet pancake can be made in advance and then put it in the fridge. When time for dinner get your helpers to add toppings. We often pair our pancake dinner with smoothies and grits. Because brinner is always a good idea, right?!

Nice mommy’s make: Anytime Sheet pan-cake
Ingredients:
* 2 & 1/2 cups Oatmeal (quick or old fashion oats both work)
* 1 & 1/2 tsp baking powder
* 1/2 tsp salt
* 1 medium sized zucchini
* 2 eggs
* 1/2 cup applesauce
* 1/4 cup pure maple syrup
* 1/2 cup milk of choice
* 1 tbsp ground cinnamon
* 1 tbsp liquid vanilla
* oil or butter for greasing pan
* Cookie sheet pan
* Food processor or blender
*Bowl
* Toppings (we like raspberries and mini chocolate chips)
Directions:
* Pre-heat oven to 350 (or when ready to cook)
* Blend oats, baking powder & salt together until flour like
* Pour oat flour into bowl * Chop zucchini into cubes
* Add zucchini, eggs, applesauce, maple syrup, and milk to food processor
* Blend until a smooth liquid is achieved
* Pour liquid ingredients into flour
* Add the cinnamon and vanilla in and stir together
* Grease pan, I use a 12×16 cookie sheet for the perfect fit
* Spread batter into thin even layer
* Top with fresh berries and chocolate chips or toppings of choice
* Bake for 20 minutes and allow to cool before cutting into small squares to serve
* Would be yummy with whip cream or maple syrup as well
* To reheat any leftovers, put under broiler for just a few minutes
