Here is a simple 3 in 1 healthy muffin recipe that’s easy to throw together with ingredients you’ll find familiar. Gluten free, dairy free, refined sugar free, with an egg free option too – but still full of goodness that anyone will love. Add or subtract a few ingredients to change things up without the hassle of learning a new recipe. Triple yay! 3-in-1 Muffin Magic: The Plain Jane
Equipment
- med-large food processor or high power blender (5 cup +)
- muffin tin
Ingredients
- 1 egg or flax egg
- 1 ripe banana
- 1 cup quick oats
- 1 tsp baking soda
- 2 pinches salt
- 1/2 cup all natural (no sugar) peanut or almond butter
- 1 cup unsweetened applesauce
- 1/4 cup pure maple syrup
- blueberries or other topping of choice
Instructions
- Heat oven to 375 degrees.
- Grease muffin tins or use silicone liners.
- Add all of the ingredients to food processor or high power blender.
- Blend until well incorporated.
- Use ¼ measuring cup to fill muffin tin.
- *Optional* Top with blue berries (frozen or fresh) before baking
- Bake 25 minutes or until toothpick comes out clean.
- Move to cooling rack for 5 minutes.
- Remove from tins and allow to cool to room temperature before storing.

3-in1- Muffin Magic: Hulk Smash
Equipment
- med-large food processor or high power blender (5 cup +)
- muffin tin
Ingredients
- 1 egg or flax egg
- 1 ripe banana
- 2 big handfuls spinach organic
- 1 cup quick oats
- 1 tsp baking soda
- 2 pinches salt
- 1/2 cup all natural (no sugar) peanut butter or almond butter
- 1 cup unsweetened applesauce organic
- 1/4 cup pure maple syrup
Instructions
- Heat oven to 375 degrees.
- Grease muffin tins or use silicone liners.
- Put banana, egg and spinach into med-large food processor
- Blend until well incorporated.
- Add oats, baking soda and salt.
- Blend again using spatula to push down the sides.
- Add remaining ingredients.
- Blend well until smooth texture is achieved.
- Use ¼ measuring cup to fill muffin tins.
- Bake 25 minutes or until toothpick comes out clean.
- Move to cooling rack for 5 minutes.
- Remove from tins and allow to cool to room temperature before storing.

Equipment
- med-large food processor or high power blender (5 cup +)
- muffin tin
Ingredients
- 1 egg or flax egg
- 1 ripe banana
- 2 big handfuls spinach organic
- 1 cup quick oats
- 1 tsp baking soda
- 2 pinches salt
- 1/4 cup cocoa or cacao
- 1/2 cup all natural (no sugar) peanut or almond butter
- 1 cup unsweetened applesauce organic
- 1/4 cup pure maple syrup
- Enjoy Life dark chocolate chips optional
Instructions
- Heat oven to 375 degrees.
- Grease muffin tins or use silicone liners.
- Put banana, egg and spinach into med-large food processor or high powered blender.
- Blend until well incorporated.
- Add oats, baking soda and salt, blend again using spatula to push down the sides.
- Add cocoa or cacao and remaining ingredients.
- Blend well until smooth texture is achieved.
- Use ¼ measuring cup to fill muffin tins.
- *Optional* top with Enjoy Life dark chocolate chips.
- Bake 25 minutes or until toothpick comes out clean.
- Move to cooling rack for 5 minutes.
- Then remove from tins and allow to cool to room temperature before storing.
Notes
These muffins are great anytime of the day as a quick breakfast, with lunch or as a snack. Change it up and use mini muffin tins (bake for 20 minutes). If your child refuses them at first, try again at another time of day. Sometimes the same thing in a new time (or mood) makes a world of difference. My kids love helping me make them and almost always eat half the batch right out of the oven.
Taking time out of your busy week to make a batch or two of a homemade breakfast (or snack) helps break the packaged food addiction we all know too well. Plus, getting kids in the kitchen is one of the most proven effective tools for getting picky eaters to try new foods! If you need to make a double batch, instead of trying to blend it all at once, make the second round while the first is in the oven and everything is still messy. This is a very thick ingredient list and most likely your blender will not be able to take on a double batch in one go. See link for large food processor below.
