3-in-1 Muffin Magic

Here is a simple 3 in 1 healthy muffin recipe that’s easy to throw together with ingredients you’ll find familiar. Gluten free, dairy free, refined sugar free, with an egg free option too – but still full of goodness that anyone will love. Add or subtract a few ingredients to change things up without the hassle of learning a new recipe. Triple yay! Try some of my other easy recipes using oats including MiMi’s Bars and Quick Oats Quick.

3-in-1 Muffin Magic: The Plain Jane

The Plain Jane version is anything but plain. A simple and tasty healthy muffin recipe without flares but with all the flavor.

Total Time 45 mins
Course Breakfast, Snack
Cuisine American
Servings 12 muffins

Equipment

  • med-large food processor or high power blender (5 cup +)
  • muffin tin

Ingredients
  

  • 1 egg or flax egg
  • 1 ripe banana
  • 1 cup quick oats
  • 1 tsp baking soda
  • 2 pinches salt
  • 1/2 cup all natural (no sugar) peanut or almond butter
  • 1 cup unsweetened applesauce
  • 1/4 cup pure maple syrup
  • blueberries or other topping of choice

Instructions
 

  • Heat oven to 375 degrees.
  • Grease muffin tins or use silicone liners.
  • Add all of the ingredients to food processor or high power blender.
  • Blend until well incorporated.
  • Use ¼ measuring cup to fill muffin tin.
  • *Optional* Top with blue berries (frozen or fresh) before baking
  • Bake 25 minutes or until toothpick comes out clean.
  • Move to cooling rack for 5 minutes.
  • Remove from tins and allow to cool to room temperature before storing.

Notes

Enjoy warm, cold or slather with your favorite nut butter. Store in airtight container for 3 days or in the fridge for up to a week. Freezes well and great to share with friends. Muffins do not rise as high as typical flour muffins.

3-in1- Muffin Magic: Hulk Smash

The big green "Hulk smash" version is full of the same flavor with an extra punch of vitamin C, iron and calcium, just to name a few. Don't let the green scare you just give them a try and see how strong you feel! Also, great with chocolate chip toppings.

  • Put banana, egg and spinach into med-large food processor
  • Blend until well incorporated.
  • Add oats, baking soda and salt.
  • Blend again using spatula to push down the sides.
  • Add remaining ingredients.
  • Blend well until smooth texture is achieved.
  • Use ¼ measuring cup to fill muffin tins.
  • Bake 25 minutes or until toothpick comes out clean.
  • Move to cooling rack for 5 minutes.
  • Remove from tins and allow to cool to room temperature before storing.

Notes

Enjoy dipped in your morning coffee or applesauce. Perfect for lunch boxes or an afternoon snack. Store in airtight container for 3 days or in the fridge for up to a week. Note: muffins don’t rise as high as typical flour muffins.

If the first two versions have not convinced you these will make you loco for the muffin magic! All the goodness from the simple ingredients plus the antioxidants of cocoa or cacao.

  • Grease muffin tins or use silicone liners.
  • Put banana, egg and spinach into med-large food processor or high powered blender.
  • Blend until well incorporated.
  • Add oats, baking soda and salt, blend again using spatula to push down the sides.
  • Add cocoa or cacao and remaining ingredients.
  • Blend well until smooth texture is achieved.
  • Use ¼ measuring cup to fill muffin tins.
  • *Optional* top with Enjoy Life dark chocolate chips.
  • Bake 25 minutes or until toothpick comes out clean.
  • Move to cooling rack for 5 minutes.
  • Then remove from tins and allow to cool to room temperature before storing.

Notes

Store in airtight container for 3 days or in the fridge for up to a week. Call them cocoa muffins instead of chocolate, so kids don’t expect a chocolate brownie. Great for an afternoon snack or packed in a lunch box. There is no trace of the spinach in taste or appearance.  But okay to omit spinach if you desire.

These muffins are great anytime of the day as a quick breakfast, with lunch or as a snack. Change it up and use mini muffin tins (bake for 20 minutes). If your child refuses them at first, try again at another time of day. Sometimes the same thing in a new time (or mood) makes a world of difference. My kids love helping me make them and almost always eat half the batch right out of the oven. 

Taking time out of your busy week to make a batch or two of a homemade breakfast (or snack) helps break the packaged food addiction we all know too well. Plus, getting kids in the kitchen is one of the most proven effective tools for getting picky eaters to try new foods! If you need to make a double batch, instead of trying to blend it all at once, make the second round while the first is in the oven and everything is still messy. This is a very thick ingredient list and most likely your blender will not be able to take on a double batch in one go. See link for large food processor below. My all time favorite kitchen appliance.

Captains log: June 1st. We are only ankle deep int Captains log: June 1st. We are only ankle deep into summer but the eldest child has already stepped on a nail, while the youngest child got herself bit by a dog, and Anna had unfortunate decapitation accident. Everyone is fine, well everyone but Anna. I’m just hopeful this is not an indication of how the rest of the summer will go.

After talking with my mentor Tammy of @footprintsofinspiration a few months ago, she gave me the healthy kick in the pants I needed to start my long time dream of writing a book. My first goal is to finish a (very) rough draft by the time my kids get out of school. I’m halfway there. Some days are incredibly overwhelming, and I feel like it’s an impossible task. Other days, I keep putting one foot in front of the other. I much prefer to tackle this project in the secret depths where my vulnerability would not be threatened; however, the book I’m reading, “Published” by Chandler Bolt demands you tell your friends, family, and the lady checking you out at the grocery store. Much like running a marathon, the accountability is a crucial piece of the puzzle. 

My goal is to help and encourage you here in this small corner of the internet. And because I call you friends, I hope the same from you at times. 

For those who have a dream. 
Try. 
Not trying is the only real failure.

On Palm Sunday crowds gathered to see Jesus enter On Palm Sunday crowds gathered to see Jesus enter Jerusalem. During His 3 year earthly ministry he told many NOT to testify of His messehanic kingship. But now the time had come for his triumphant entry and the crowds shouted, Hosanna. God saves! They threw their cloaks on the ground symbolizing their submission to Jesus as their coming King. The King they waited for, and hoped would save them from the oppression of the Romans. 
 
Only days later many of the very same people who shouted Hosanna, shouted to crucify Him.
 
They believed in Jesus who performed miracles, healed the sick, fed thousands, resurrected the dead, cared for the broken, poor and destitute. But refused to surrender to a king who showed us how to surrender it all. 
 
Sometimes, a lot of times, it is much easier believing in Christ than it is to surrender to Him and His perfect will. 
 
Maybe we are not the fickle crowds quickly trading praise for prejudice, but how often do our hearts refuse a full surrender?
 
My prayer for myself, my family and yours is that we may be the same people on Psalm Sunday that we are on Good Friday and beyond. 
 
So they took branches of palm trees and went out to meet him, crying out, “Hosanna! Blessed is he who comes in the name of the Lord, even the King of Israel!” John 12:13

Is it still Monday? Been one of those days, week Is it still Monday? 

Been one of those days, weeks, years where you can’t get ahead. 

These herbs on my window seal are a simple joy. When the storms keep coming in waves, simple joys bring in the sunshine. 

Here’s how I keep my basil alive. Buy one of the small plants in the soil, available most grocery stores. Stick it in a small glass cup in a window or your kitchen where you will see it and water it every other day. Basil is thirsty! 

Cilantro, is a beast to keep alive. I used to never use it all before it went bad and hated that. Now I keep the bushel like fresh cut flowers right next to my basil. Trim the ends and stick it in a cup of water. This batch has been happy for 2 and half weeks, just keep water in the cup. 

I use them in salads, tacos, garnish, even smoothies! I hope my joy brings you some.
