My kids love California Rolls. We have our favorite sushi spot where we go and sit up at the bar and they make it right in front of you. Before the sushi comes out they serve these little cucumber salads, which my kids devour. And this is where the vision for this super simple recipe is from, which I am calling a Sushi Bowl.
If your kids have never been apt to trying sushi or anything like that. Take them up to the sushi bar and give it a whirl. If you say they will never eat that, the odds are, they will never eat that.
Here is my super simple sushi bowl which does include a “pre-cooked” fish I found at Whole Foods.

Ingredients:
Recipe serves roughly 4
1 cup cooked rice – any kind will do we have used sushi rice and brown rice
1 English cucumber thinly sliced
12 oz Surimi Seafood – a cooked and ready to eat fish found at many grocery stores for sushi rolls and salads
My simple homemade teriyaki marinade
Directions:
Cook rice according to directions and set aside to cool. This can be done in advance.
Mix together the teriyaki marinade. This can also be done in advance.
Thinly slice cucumbers.
Assemble bowls by adding rice, top with cucumbers, surimi seafood and a few spoonfuls of teriyaki marinade.
Optional top with diced chives.



Tips:
The surimi I use is from Whole Foods and is a cooked flake-style made with Wild-Caught Alaskan Pollock. It is not fishy, not expensive at less than $5 per 12 oz pack and of good quality. Most grocery stores will contain some options of this, check in the refrigerated section near the fresh seafood counter.

My kids like the rice separately with a little soy sauce and the cucumber and fish with the teriyaki marinade.

Grocery stores like EarthFare and Publix have half off sushi days, Wednesday typically, if you want to serve your bowls along with some traditional sushi as well.
