This is a new family favorite so had to get it logged in! Let me know what you think.
Prep time about 15 minutes
Cook time about 45 minutes
Feeds my 2 bigs and 2 growing kids (we eat it all, there is never leftovers!)
Ingredients:
That’s easy salad dressing:
1/4 cup of olive oil & balsamic, 1 tablespoon of maple syrup & spicy mustard, pinch of S&P
2 large chicken breast
1 red bell pepper
1 pint of cherry tomatoes
1 small red onion
1/2 cup capers (juice removed)
1/2 cup of pitted Kalamata olives (juice removed)
3 Tablespoon of olive oil
1 teaspoon salt and pepper to taste
Large sheet pan
Rice

Directions
Make dressing – this can be done in advance to save time
Preheat oven to 400
Cut chicken in bite size pieces
Add chicken to shallow dish or zip lock and pour dressing on reserving about 1/4 for later
Set aside aside chicken to marinate while you chop veggies
Cut bell pepper and onion into chunks
Add cherry tomatoes and chopped veggies to the sheet pan
Add 3 tablespoons of olive oil and 1 teaspoon of salt to veggies, give them a little toss
Spread out vegges and add chicken to sheet pan, do your best to have one even layer
Cook for 20 minutes
Make your rice according to directions, takes about 20 minutes total to make white rice
Pull 1/2 cup of capers and pitted olives out of juice
Pull pan out, top with olives and capers, add back to oven for 15 minutes
Remove from oven and chop up and mix everything together on the pan
Add the remaining dressing, mix and serve hot over rice
Top with a little feta if you would like but it has a lot of flavor so not necessary
Tip
For kids that are more selective eaters:
Set aside some of the veggies raw, remove a few bites of the chicken before chopped and incorporated in the larger mix.
Then serve the raw veggies, rice and chicken all separately
You are still making one meal, they are eating whatever one else is, just a built a little differently
White rice does take about 15 minutes to cook. If you prefer brown rice, it takes about 45 minutes to cook so just start that at the beginning. I also always have frozen rice in the fridge which we love and cooks up very quickly.
