This simple turkey dish is a family favorite and there are absolutely no signs of dry turkey here! All the natural juices and all the flavor. I would say comfortably feeds 6-8 people.

Ingredients:
1, 3-4 pound split turkey breast with bone in – Trader Joe’s has these year round. Near the holiday you can stock up and freeze them.
1 sweet onion
2-3 stalks of celery
1 head of garlic
1 tablespoon of salt
1 tablespoon of smoked paprika
½ tablespoon of onion powder
½ tablespoon of garlic powder
A few sprigs of fresh rosemary or thyme or both
1 lemon
Slow Cooker
Edged serving platter
Directions:
- Peel and chop up onion into layers.
- Open up the garlic head and separate and peel out garlic cloves.
- Add celery stalks, onion and 5 or so garlic cloves or the bottom of the slow cooker
- Put thawed turkey breast on top of the veggies.
- Combine all of the spices into a small container.
- Mix the spices and use as a dry rub over the turkey breast. Get under the skin and on each side. It doesn’t have to be rubbed in just a gentle sprinkle and pat all over.
- Slice the lemon into layers.
- Add lemon, 3-4 peeled garlic cloves and springs of fresh herbs to the top of the turkey breast.
- Add top to slow cooker.
- You have two choices for cook settings:
High 1 hour and low for 3 additional hours.
Or
Low for 6 hours.
- After cooking, carefully remove the herbs, lemon and discard.
- Pull out turkey breast directly onto a serving platter with edges so the juice does not spill out.
- Pull out bone and cut turkey into large chunks or bite sized pieces. (Save bone if you want to make soup with any leftovers)
- If you wish, add the veggies to the platter as well, they are yummy.
- Pour the juices remaining in the slow cooker over the turkey and serve warm.
