Quick to cook and they will be quick to eat this easy throw together one pot stir fry.

Quick Gobble Stir Fry

A quick, no chop but lots of veggies turkey stir fry, that will have everyone gobbling for more. Naturally dairy free, gluten free, refined sugar free, paleo and whole30 approved.

Equipment

  • 1 large wok (or skillet)
  • 1 teaspoon
  • 1 tablespoon
  • 1/4 measuring cup

Ingredients
  

  • 1 lb ground turkey
  • 1 16oz bag of mixed pre-riced veggies (mixed variety or cauliflower)
  • 1/4 cup coconut aminos
  • 1 tbsp toasted sesame oil (optional but encouraged)
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 tsp minced garlic (jar of pre-minced garlic)
  • 1/2 tsp salt (pink or celtic sea salt)
  • 2-4 tbsp avocado or olive oil
  • 1 pack Romain lettuce and/or endives
  • 1-2 lime

Instructions
 

  • Drizzle your pan with oil and turn heat to medium.
  • Add ground turkey, basil, oregano, minced garlic, and salt to the pan.
  • Mix well to incorporate spices and make sure no big chucks remain as turkey browns fully.
  • Add in riced veggies, another tablespoon of oil and stir.
  • Add coconut aminos, toasted sesame oil and sauté for 5 minutes, stirring occasionally.
  • Add juice of 1 lime, toss, cover with lid and cook for an additional 5 minutes.
  • Prep lettuce, endives, wraps of choice, or serve in a bowl by itself or over lettuce.
  • Allow to cool some before adding lettuce and serve with wedge of lime.

Notes

This is a recipe you will want to keep coming back for and all of the ingredients, if not already in your pantry, should be! First the dried spices add lots of flavor and nutrient value like enzymes that help your body fight off chronic disease and illness. We all want our kids to eat more veggies, why? Well, they build healthy bodies and healthy immune systems. Once the meat browns and the flavors from the coconut aminos and sesame oil do their magic, the veggies will be almost unidentifiable. Most grocery stores are making it easier by offering pre-riced veggies either in the produce isle or freezer section. I have tried a mixed medley as well as just cauliflower – they both worked perfectly. I know feeding a toddler a lettuce wrap sounds terrifying but sometimes a new method of “plate to mouth” is just fun enough to get them to take a bite.  Look for endives in your store as a fun little vehicle for food; if all else fails bowl and spoon are old faithfuls. This is a go-to dinner around our home but would work well as a weekly lunch prep. The leftovers served over crunchy lettuce with a squeeze of lime and a dash of coconut aminos – hits all the right taste buds.

The nutrition profile of cauliflower is impressive! It is an excellent source of vitamins and minerals, containing some of almost every vitamin and mineral that you need. Count me impressed! Kids are smart and including them on the “why” we should eat more vegetables will help create well rounded and adventurous eaters. We are only ankle deep into summer but the eldest child has already stepped on a nail, while the youngest child got herself bit by a dog, and Anna had unfortunate decapitation accident. Everyone is fine, well everyone but Anna. I’m just hopeful this is not an indication of how the rest of the summer will go.

After talking with my mentor Tammy of @footprintsofinspiration a few months ago, she gave me the healthy kick in the pants I needed to start my long time dream of writing a book. My first goal is to finish a (very) rough draft by the time my kids get out of school. I’m halfway there. Some days are incredibly overwhelming, and I feel like it’s an impossible task. Other days, I keep putting one foot in front of the other. I much prefer to tackle this project in the secret depths where my vulnerability would not be threatened; however, the book I’m reading, “Published” by Chandler Bolt demands you tell your friends, family, and the lady checking you out at the grocery store. Much like running a marathon, the accountability is a crucial piece of the puzzle. 

My goal is to help and encourage you here in this small corner of the internet. And because I call you friends, I hope the same from you at times. 

For those who have a dream. 
Try. 
Not trying is the only real failure.

On Palm Sunday crowds gathered to see Jesus enter On Palm Sunday crowds gathered to see Jesus enter Jerusalem. During His 3 year earthly ministry he told many NOT to testify of His messehanic kingship. But now the time had come for his triumphant entry and the crowds shouted, Hosanna. God saves! They threw their cloaks on the ground symbolizing their submission to Jesus as their coming King. The King they waited for, and hoped would save them from the oppression of the Romans. 
 
Only days later many of the very same people who shouted Hosanna, shouted to crucify Him.
 
They believed in Jesus who performed miracles, healed the sick, fed thousands, resurrected the dead, cared for the broken, poor and destitute. But refused to surrender to a king who showed us how to surrender it all. 
 
Sometimes, a lot of times, it is much easier believing in Christ than it is to surrender to Him and His perfect will. 
 
Maybe we are not the fickle crowds quickly trading praise for prejudice, but how often do our hearts refuse a full surrender?
 
My prayer for myself, my family and yours is that we may be the same people on Psalm Sunday that we are on Good Friday and beyond. 
 
So they took branches of palm trees and went out to meet him, crying out, “Hosanna! Blessed is he who comes in the name of the Lord, even the King of Israel!” John 12:13

Is it still Monday? Been one of those days, week Is it still Monday? 

Been one of those days, weeks, years where you can’t get ahead. 

These herbs on my window seal are a simple joy. When the storms keep coming in waves, simple joys bring in the sunshine. 

Here’s how I keep my basil alive. Buy one of the small plants in the soil, available most grocery stores. Stick it in a small glass cup in a window or your kitchen where you will see it and water it every other day. Basil is thirsty! 

Cilantro, is a beast to keep alive. I used to never use it all before it went bad and hated that. Now I keep the bushel like fresh cut flowers right next to my basil. Trim the ends and stick it in a cup of water. This batch has been happy for 2 and half weeks, just keep water in the cup. 

I use them in salads, tacos, garnish, even smoothies! I hope my joy brings you some.
