It all goes in one pot and I know you’ll love it a lot!

Ingredients:
1 8 oz can of tomato sauce
1 6 os can of tomato paste
3 tablespoons of coconut aminos
2 tablespoons of maple syrup
2 tablespoon of mustard of choice (we use brown spicy mustard)
2 teaspoons of smoked paprika (not the same as traditional paprika)
1 tablespoon of salt
Pepper to taste
3-4 chicken breast
1 mediums sweet potato
1 sweet onion
1 10 oz bag of cauliflower florets
3 cloves of garlic
Crock Pot
Directions:
Peel and chop sweet potato into small pieces, place on bottom of slow cooker.
Chop off any larger ends of the cauliflower and discard, give the rest a rough chop.
Dice onion and garlic and add all to the slow cooker.
Sprinkle 1/2 tbs salt and some pepper on veggies.
Layer chicken breast on top of veggies and additional 1/2 tbs salt and some pepper.
Then add the can of tomato sauce, tomato paste, 3 tablespoons of coconut aminos, 2 tablespoons of maple syrup, 2 tablespoon of mustard, and 2 teaspoons of smoked paprika as the final layer.
Cook on low for 4-5 hours.
Using forks shred chicken and mix ingredients all together so the veggies puree right into the shredded chicken.
Cook for one more hour (ish), stir again to make sure everything is well incorporated and serve!
Slow cookers are very forgiving so as long as you get close on the times you are good.

A few tips:
If you are one to skip recipes because of unrecognized ingredients. I get it! But I work hard to make sure if I purchase an ingredient to use it in multiple recipes. Coconut aminos and Smoked Paprika are some of my favorite flavor enhancers. Here are a few more recipes where I use them, I think you will love them too.

The leftovers freeze well or serve leftovers differently later in the week.
A few ways to serve Slow Cooker BBQ Chicken with veggies:
On a quality hamburger bun with a crunchy piece of Romaine lettuce.
Over a traditional baked or sweet potato with slaw and all the fixings.
Make a bbq chicken pizza. In a bowl with a spoon and a fresh piece of bread. Sky is the limit!
