Easy Peasy Tahini Pasta

If you don’t love an easy pasta recipe, then we cannot be friends, but I know you do, so we are fine! This gem comes together in a snap and is a go to staple in our home. This is great as a plant based lunch that can be packed in a thermos or as a hearty side. It is lightly coated with a sweet and nutty sauce that’s less mess for kids and appropriate toddler finger food for the newbie eaters. Yet, still sophisticated enough for hungry grown ups. You will be happy to add Easy Peasy Tahini Pasta to your rotation.

Easy Peasy Tahini

Pasta, veggies and a creamy nutty sweet 3 ingredient sauce that you will want to pour on everything! Gluten free (if you wish), dairy free, refined sugar free and free of complaints -because it's so good.

Cuisine American

Equipment

  • big pot
  • tablespoon and small mixing bowl for sauce
  • colander

Ingredients

3 ingredient sauce

  • 2 tbsp tahini (or all natural peanut butter)
  • 2 tbsp oive oil (extra virgin)
  • 4 tbsp coconut aminos (Braggs Live Food Products)

Pasta

  • 1 10 oz shell or spiral pasta (gluten free optional)
  • 1 16 oz mixed veggies (best for kids is the pea & carrot medley)
  • 1 tbs salt (pink or sea salt)

Instructions

  • Bring large pot of water to boil and add salt.
  • Get out your ingredients together and put a colander in the sink.
  • Add noodles to boiling water and set timer for half of the suggested time.
*Gluten free noodles are easily over cooked.
  • Mix tahini, olive oil, coconut aminos together and whisk well. If kids are helping let them have a taste test.
  • Check noodles, when tender, add veggie mix into boiling water.
  • Immediately dump pasta mix and water into the colander. Toss to get excess water out and drizzle with olive oil.
  • Move from colander back to pot or large serving bowl. Whisk sauce once more and pour over warm pasta. Stir and serve warm.

Notes

This sauce is intended to lightly coat pasta, as it makes for much less mess when feeding littles. You can always adjust by doubling the sauce if your taste buds so desire. If eating as leftovers, simply sprinkle a little more coconut aminos when re-heating the dish.

Tahini is made from toasted ground sesame. It is a major ingredient in hummus and easily found at most grocery stores. Expect oil on the top, it needs to be mixed and stored in the fridge after opening. I have subbed peanut butter when I did not have tahini with similar results.

Coconut aminos has a sweet asian flavor and can be used in anything from quick dressings to sauté veggies on the stove top on the fly.

If you do not have a 16oz bag of a veggie medley then use a bag and half of 10 oz. I like to make sure there is a good veggie to pasta ratio. Make it harder for them to pick around all the peas and carrots. I like how the peas get stuck inside the shell pasta shapes if you use that variety.  The sauce makes it all tasty but if they still veto the veggies, pat yourself on the back for exposing them to the good stuff either way.

This sauce also is works in salads with a heavy lettuce like kale or shaved brussels.
Keyword carrots, dairy free, easy lunch, finger food, gluten free, kid approved, pasta, peas, plant based, refined sugar free, toddler meals, vegan, veggies

Keep these ingredients on hand as a meal that you can rely on in a hurry. Also, this a good one to get kids helping in the kitchen. If they make it, they are more likely to eat it.

Live well friends,
Christy

Captains log: June 1st. We are only ankle deep int Captains log: June 1st. We are only ankle deep into summer but the eldest child has already stepped on a nail, while the youngest child got herself bit by a dog, and Anna had unfortunate decapitation accident. Everyone is fine, well everyone but Anna. I’m just hopeful this is not an indication of how the rest of the summer will go.

I had taken some time of the socials to focus on a writing project that I hope to share with you soon. I have some posts planned but help me get back into the swing of things and let me know what kinds of info you will find most helpful this summer:

After talking with my mentor Tammy of @footprintsofinspiration a few months ago, she gave me the healthy kick in the pants I needed to start my long time dream of writing a book. My first goal is to finish a (very) rough draft by the time my kids get out of school. I’m halfway there. Some days are incredibly overwhelming, and I feel like it’s an impossible task. Other days, I keep putting one foot in front of the other. I much prefer to tackle this project in the secret depths where my vulnerability would not be threatened; however, the book I’m reading, “Published” by Chandler Bolt demands you tell your friends, family, and the lady checking you out at the grocery store. Much like running a marathon, the accountability is a crucial piece of the puzzle.

My goal is to help and encourage you here in this small corner of the internet. And because I call you friends, I hope the same from you at times.

For those who have a dream.
Try.
Not trying is the only real failure.

This is so fun, I truly can’t believe we get to do it over and over again. The kids demanded we go straight in and make a salad. In the morning we are using the mint for smoothies!

Here’s a simple way to prepare it that will make quinoa something you actually want to eat, and three ways to use it up!

What are your feelings on the healthy ancient grain that’s loaded with many important nutrients, including fiber, protein, folate, and magnesium? Or possibly the more important question, can you spell it?

Jesus’ actions on the cross and his resurrection Jesus’ actions on the cross and his resurrection three days later moved the church from a building to a body. A body of people. Broken people that He is constantly mending and saving over and over until He comes again.

A lot of people believe in God. A lot of people pray to God. But people still need Jesus. And the plan has always been Jesus.

On Palm Sunday crowds gathered to see Jesus enter On Palm Sunday crowds gathered to see Jesus enter Jerusalem. During His 3 year earthly ministry he told many NOT to testify of His messehanic kingship. But now the time had come for his triumphant entry and the crowds shouted, Hosanna. God saves! They threw their cloaks on the ground symbolizing their submission to Jesus as their coming King. The King they waited for, and hoped would save them from the oppression of the Romans.

Only days later many of the very same people who shouted Hosanna, shouted to crucify Him.

They believed in Jesus who performed miracles, healed the sick, fed thousands, resurrected the dead, cared for the broken, poor and destitute. But refused to surrender to a king who showed us how to surrender it all.

Sometimes, a lot of times, it is much easier believing in Christ than it is to surrender to Him and His perfect will.

Maybe we are not the fickle crowds quickly trading praise for prejudice, but how often do our hearts refuse a full surrender?

My prayer for myself, my family and yours is that we may be the same people on Psalm Sunday that we are on Good Friday and beyond.

So they took branches of palm trees and went out to meet him, crying out, “Hosanna! Blessed is he who comes in the name of the Lord, even the King of Israel!” John 12:13

Is it still Monday? Been one of those days, week Is it still Monday?

Been one of those days, weeks, years where you can’t get ahead.

These herbs on my window seal are a simple joy. When the storms keep coming in waves, simple joys bring in the sunshine.

Here’s how I keep my basil alive. Buy one of the small plants in the soil, available most grocery stores. Stick it in a small glass cup in a window or your kitchen where you will see it and water it every other day. Basil is thirsty!

Cilantro, is a beast to keep alive. I used to never use it all before it went bad and hated that. Now I keep the bushel like fresh cut flowers right next to my basil. Trim the ends and stick it in a cup of water. This batch has been happy for 2 and half weeks, just keep water in the cup.

I use them in salads, tacos, garnish, even smoothies! I hope my joy brings you some.

Will you share one of your simple joys with us in the comments? 👇

P.S. Can you read my painting? Gifted to me by the loving and talented @christiarnettedesignsart
